Happy Cinco De Mayo Day

I am off to a very slow start this morning. Set alarm for 6:20 to wake daughter up. She is going on a all day outdoor retreat with all of the 6th graders. She had to be a school at 7:15 and won't get back until 10:30 tonight. It is cloudy out today but they are not calling for rain.

I got my results back from the blood work yesterday. My liver is fine. My cholesterol was a little high. It was 217 and they want you under 200. My bad LDL was 147 which they want you under 100. My good HDL was 37 and they want it at over 50. I have some work to do on that.

Yesterday I made 19 breakfast burritos. I used corn tortillas and made scrambled eggs with spinach, basil, cilantro and pepper. I rolled the mixture up in the tortillas and froze them. I took out my Food Saver and saved them in the little bags they give you. Whenever I want one I can just pop them in the microwave. I do that a lot when it gets warmer outside. I make tons of pancakes and freeze them so my daughter can just get up and away she goes.

I can't seem to find my husband. I got up this morning and he was having coffee and I asked him to take our daughter to school since she had to be there early. Yesterday his work said they would call him to come in today but I didn't hear the phone ring. I went back to bed this morning because I was so tired. My husband is so sick. He came down with a bad cold. I asked him how he was feeling this morning and he said like crap. I noticed to took some Comtrex. Our garage door was wide open making me believe that he is around here somewhere. He is also scheduled to work tomorrow. I hope he hasn't decided to work his both days off.

Time to get moving. Everyone have a great Day.

Great now I am craving Mexican food.

Good news is you WILL turn those medical issues around!! When I started this journey I was taking 22 prescription pills a day, now I'm down to 5 and everything is in the wonderful range where it should be! My chol is 129 (when I started it was 310) my B/P runs 110/68 (I was on 3 meds and my bottom number still ran at 100) and my fasting sugar in the morning is now :65-68 (When I started this I was taking 6 pills a day because 4 months earlier my fasting sugar was 400!!!). There were other things too and when I had lost 10% of my body weight, things started to change and now everything is perfect!!! Keep working at it and you will get there!! The burritos sound yummy....and perfect to freeze. We do chicken and stuff like that, my hubby grills 25 breast at a time and we freeze them all cooked. When Mandy was in school, I did that with French Toast too and she was always able to have a yummy warm breakfast before school :)
